Well, I would say this. I do software development and testing and I use the 8 Gb model for a few reasons:
1) I am not keeping the M1 Mac forerver. Comparing to my MacBook 2014 on Intel which lasted me 7 years, I plan to use this M1 Mac no longer than 2-3 years. By that time, the 16 Gb version would probably be the base one and processors would be much faster. I would rather pay it towards the new model. I expect the platform being more mature at that point as well.
2) Yes, I saw some issues and lags with 8 Gb model. But I open a ton of tabs and it honestly makes me be a little bit more organized. I don't really need all those tabs at the same time.
3) This M1 Mac is still an experimental product and as mentioned in #1 I plan on replacing it at some point anyway.
But if you need 16 GB model for some specific reason - don't be ashamed to buy it. It's your money after all and nobody else has the power to tell you where you should spend your hard-earned money.
